During the heyday of the Old West, when cattle was king, cowboys drove the cows from large ranches to railroad depots. These drives, along such byways as the Chisholm Trail, lasted for months. Cowboys endured harsh weather, rough terrain, wild animals and homesickness. One thing the wranglers looked forward to was the food. And the food was cooked by a "Cookie" who prepared all those mouth-watering dishes from a Chuck Wagon. Every classical French recipe can be prepared in the old fashioned way of Dutch Oven cooking. But make no mistake, we also prepare good old fashion western home cooking.
